The England winger was the subject of a £35m bid from the Bavarians in January.
Hudson-Odoi subsequently handed in a transfer request to try and push the deal over the line.
But Chelsea dug in their heels, and kept the 18-year-old on their books.
After their most recent bid was rejected, Bayern have finally given up on signing Hudson-Odoi, it added.
Instead, the club will revert back to trying to sign Manchester City’s Leroy Sane.
City want around £100m for Sane, but Bayern have already said they’re unwilling to match that valuation.
Even still, Bayern boss Niko Kovac is hoping to confirm the signing before the end of the transfer window.
Hudson-Odoi is out of contract at Chelsea next summer, and the Blues are keen to tie him down over the coming weeks.
It’s believed that reported incoming boss Frank Lampard plans to offer the forward a new deal shortly after he arrives.
Chelsea could even offer him a new contract after he recovers from his injury setback.
The England winger was ruled out for the rest of the season at the end of April, after he suffered an Achilles injury during a Premier League match against Burnley.
Bayern are in need of at least one new winger this summer, as both Arjen Robben and Franck Ribery are set to leave the club.
Bayern’s sporting director, Hasan Salihamidzic, confirmed that they were interested in signing Hudson-Odoi, in January.
“All I can say about Callum Hudson-Odoi is that I think he’s a good player and he’s a player who we have a great interest in,” he said.
“In my opinion, he’s a player who would fit in well at our club. He’s got unbelievable qualities.
“He’s good at dribbling and has pace. In my opinion, he’s a player we would definitely like to have. Let’s see what happens.”
